I don't think it's going to work quite the same in the next version. One shield in each hand may be all the benefit you can get out of them. We'll have to wait and see of course, but Toady has been making a LOT of changes to the combat mechanics.

Hydras are a threat, it's Dragons that are the runts. Soldiers always go for the head whenever they can, but Hydras have plenty of redundancy there, so you can't really get instakills on them in combat.

Toady hasn't mentioned changing how backpacks work so I would guess they probably still serve as a bottomless pit. Doesn't mean Toady won't change that on a whim in the more distant future, and I suspect he would, but he hasn't mentioned it for this next update.
I was implying that Toady could have changed the way blocking with shields works. We'll have to see, though.
