I know you can set a smelter up to produce any stone, wood, plant. or metal, but could you create a reaction for something like hides?

You can make any item type.
However if the material is from plant/animal, there'll be a weird stuff. The game does not take the creature's material right, it gets it's numeric value and takes a material from the list in the exe with the same numeric value.
