Yes.

A dwarf eating in a "Dining Room" wont be as happy as one eating in a "Royal Dining Room"

As well, keep in mind that if anything is "shared" the quality is reduced and the dwarf gets a unhappy thought... So make sure that chairs and tables arn't shared between dwarves, along with containers, room space, etc.

Room quality effects moral.  Room quality for the dining room effects moral twice as much as for anything else, maybe even more.  If the dining hall is good enough, your dwarves will be the happiest little buggers even in the face of horrible tragedies everywhere else.  They could be wading through baby guts on the way to work every day, accosted by vermin, made to sleep on the stone floor, outside, in the rain, while their clothes are rotting off, but if the dining room is nice enough, they'll overlook these "trivial" things and be overwhelmingly happy.

Hey, that must be why my Dwarves are not throwing tantrums all over the place like in my other games even tough their quarters are really bland in comparison now. In my latest game, I decided to plan ahead and build a big dining room.

I don't play with immigration limits, and this setup worked way fine for me up to almost 80 Dwarves now even tough I didn't even engraved the room, only smoothered the walls. I do have a problem with the magma workshops tough, because I built my dining room really near the entrance. I'm thinking about waiting for after the river before building that kind of room for my next fortress, because with more than one dining room then it really ought to create some heavy needless traffic between the two places...

Question: I didn't noticed a difference with my Dwarves, but if I understood correctly then I should remove 4 chairs in that setup else some Dwarves are going to get a "shared" thought if there's alot of Dwarves eating at the same time, right?

I just do rows of tables with 1 chair each like this

By putting a few different banks of them near each food stockpile, all the dwarves have a table to sit at when they eat.  Each is set as its own room, and by sizing them big enough they class as decent dining rooms.  That is even with 1/4 penalty for overlapping.  This allows me to just assign a noble a table in an area where it is easy to pick up after them too.

The problem with that is that most of the chairs and all of the wells are inaccessible due to the fact that dwarves won't climb over tables or chairs.

I didn't know that, either, until I tried building something like that.  Some of the furniture was blocking where I wanted to place other furniture, and it was a while before I figured out why.  This problem was made worse by the fact that I didn't know to use t instead of q to remove unplaced furniture.

They also tend to walk over tables and chair in my game...

Suggestion: maybe they won't walk over a table or chair if someone already queued a use for it.  :)
