So I'm trying to control what each dwarf is doing and I'm having trouble understanding the "J" (job) menu.
When I press the key, I see an entire page full of jobs (?), such as:

The job screen is mostly useful for finding jobless dwarves, zooming to them and adding a labour preference. Later on, when you get a manager, it'll be a bit more useful.
Note: Jobless dwarves are at the bottom of the list.

It basically lists all the jobs you have assigned. Like if you set up 8 beds to be placed, and they arent done yet, there will be 8 'drag furniture' orders or whatever. Then as dwarves finish up their current jobs, they will get to work on the new ones if you have them set to do it.
Its just a visual queue so you can see what is gonna be done.

It's basically a To Do list for your whole fortress.

Does the order of the jobs mean anything?

Well, they always seem to be listed in the same order -- Dig jobs first, Eat and Drink next, then Sleep, then Store Item, then Construct Building, then everything else. I don't think there's any sense to the order of, say, all the "Store Item" jobs, except that maybe they're listed in the order they were created; but that seems to have very little to do with the order in which they get fulfilled.
