Title: Dwarf Fortress Food Thread - we *might* draw your prepared meals!
Post by: NJW2000 on June 11, 2015, 02:00:13 pm
Dwarf Fortress Food Thread

Ok, the basic premise here is that the food/cooking system (prepared meals) is a as-of-yet mostly unused source of interest. So here's a space to share ideas, art, strategies, tips, mods, jokes and findings with the community, to do with prepared meals (or just raw meat or whatever, or even booze :)).

While it may not seem this way at first glance, DF food can be pretty interesting. For example, did you think it was a thoughtless and hasty script that ignores whether a meal consists of sweet or savoury components? WRONG! This actually really chimes with 14th Century or so cooking, where they did not actually distingiush between savoury and sweet in puddings and desserts to any great degree, though they were aware of the interplay of flavours.

Oh, and ignore the "finely minced" thing. I'm sure Toady cares about this, and will fix it sooner or later. Or someone will make a mod that helps.

Thread News:
I will be willing, if I have time, to draw any especially intersting, or even just noteworthy to you, dishes you suggest that dwarves made, or you did via adv.mode mods. Please post full FB descriptions if they're involved, and your own art would be great!
I will also, if none are suggested, draw one of my own later today!

OK, then, the very first prepared meal I made this version, after letting a couple dwarves run wild as untrained herbalists:

Well, as any true dwarf knows real food had exactly 2, 3 or 4 ingredients:

PTW

and maybe contribute a drawing or two.  I'm itching to have an excuse to power level my engraving.

also, half of these are going to be *Cat Tallow Roasts* with the only ingredient being cat tallow. Which I will now take the liberty to draw.

You'd be surprised how dwarves prefer tallow over any other ingredient.

Right then! As there are no volunteers just yet, here we go with a drawing! I'll post the description as an image so Alfrodo can join in if he wants, and outshine me.

That llama cheese roast probably looks like a roast porcupine stuffed with cabbage, coated with a layer of cheese and mashed bayberries atop it. (I've never tasted them, but they're waxy and like blackberries)

I pictured about the same thing, except picturing the cheese mixed with the cabbage as part of the stuffing, and a blueberry sauce poured over the whole thing.

Blueberries, actually. Here's my take:

Massive image -

There was a terrible bit where the pad wouldn't draw where I put my fingers for a while, but it sorted itself out in the end... imgur via pad is also hard, the drawbacks almost outweigh the technical power it provides, but not quite... sorry for large image.

Whaddya think?

EDIT: those are meant to be kebab sticks, and the quill is decorative. I guess I imagined a bit more cabbage than you two, or probably the dwarves :P

Whaddya think?
hmm. An interesting take. So is the biegish stuff on the kabab alpaca cheese? and the red bit raw hedgehog meat?

A bit rare.  But I guess dwarves eat intestines right out of the animal, so it'd probably be delicious to a dorf.

I wouldn't be surprised to see this, with a few more kabobs lodged in the steamed cabbage, with a little more bayberry in a 4 star dorf restaurant.

I don't know if he purpose of this thread is to make culinary sense of the dishes, or to make fun of the dishes.

Me neither. I know I should've worked into it a little more, but my tablet was really messing up; I couldn't undo without drawing, and it drew on the opposite side of the screen from where I touched. Now I know how to fix it (wait fo it to stop) I'll be able to spend a bit more time on those masterwork wolverine intestine roasts.

That's my drawing done for tonight, how about someone else submits a modest-ish (NW) dish to draw?

You should probably get a different program.

I'm using Sketchbook pro, which gives everything a sketched out look.  But you can undo and it works pretty well.

Paint.net and photoshop work well.

What I would have in mind for that, is a puddle of prickle berry seed butter. (Seed butters are a thing. (http://www.frontdoororganics.com/Nuts-To-You-Sunflower-Seed-Butter.jpg?resizeid=-2&resizeh=195&resizew=195))

But that's beautiful.

Alot of these I like to make culinary sense of. But some you just cannot. (Entire meals made of tallow is hard to imagine as anything other than a giant mound of melting lard.)

For some reason, the colours are greyer than on my tablet... dodgy upload, perhaps, though it doesn't matter that much... Wasn't really sure how to draw intestines, as there were many different results, so I kinda made something up based on the images on google. Didn't quite capture the colour of capers, but didn't expect to. Couldn't add more detail due to fatigue.

Er... is he using the crowbar to eat it?
Title: Re: Dwarf Fortress Food Thread - we *might* draw your prepared meals!
Post by: Alfrodo on June 12, 2015, 05:38:30 pm
No.  The crowbar is for Gordon Freeman, when he mistakes it for a headcrab.

I don't think the dwarf plans to eat that anytime soon.

Tortoises have some huge brains :P

Anyway, NJW, yours was appropriately disgusting. Alfrodo, yours was sufficiently cartoony/funny that it didn't trigger my gag reflex.  (But I sure wouldn't be eating that, either...)

Fun fact: According to Wikipedia, bayberries are also called "candleberries" because they are so waxy, they were historically used to make candles.

There you go.  I didn't feel like making a dwarf to inspect, comment on, or eat it.

All I have to say is:

Booze as soup stock was the best idea ever.

Also, those are awfully large cherries.

Booze as soup stock was the best idea ever.

Also, those are awfully large cherries.

Maybe they're the persimmons?

Anyway, not as crazy as one would expect, but maybe it's just pulling from a giant bowl of "utterly random ingredient tossed salad"...

Presumably, booze (or rather, beer,) is the salad dressing.

Breakfast in my fortress: Purple amaranth bread toast.
Post-breakfast drink: Purple amaranth beer.
Lunch in my fortress: Purple amaranth leaf salad.
Dinner in my fortress: Turkey egg omelettes with purple amaranth beer and cherries for flavor.

Meanwhile, I have a stack of something like 300 plump helmets my brewer and cook won't touch for some odd reason.

Well, to keep the well from running dry, I've been getting a lot of roasts like this, lately:

+Guinea hen egg+
*Turkey hen egg*
-Blue peafowl meat-
*Hen egg*

or

+Quarry bush leaf+
*Giant Tortoise meat*
+Hen egg+
-Turkey hen egg-

I'm guessing my cook REALLY likes omelettes, because I'm sitting on over a thousand plants which are running out of seeds rapidly.

(And yes, I have a *hen egg roast [45]* consisting entirely of eggs from four different types of bird. I presume the cook just started making scrambled eggs, and never stopped.)

So I went through my stocks screen, and it turns out, with the exception of a couple stragglers held by my military, all my remaining prepared foods are made of eggs.  (I've made limited prepared meals to keep wealth down.)

Spoiler (click to show/hide)

I feel like it's a Monty Python skit at this point.

Old woman dwarf: "What do you have here?"

Cook: "Well, we have the turkey egg roast with turkey meat, quarry bush leaf, bayberry, and turkey hen eggs. Or, there's the hen egg roast with persimmon, tortoise spleen, plump helmets, and hen eggs.  Then there's the OTHER hen egg roast with tortoise tallow, turkey hen egg, chicken hen egg, and more turkey hen egg."

Old woman dwarf: "Do you have anything without eggs in it?"

Cook: "Well, how about trying the oat flour roast? It has hen eggs, a leaf, a berry, eggs, another berry, eggs, and some oat flour!"

Old woman dwarf: "That has eggs in it!"

Cook: "No it doesn't."

Old woman dwarf: "Yes it does, you said it three times!"

Cook: "Well, how about the turkey hen egg roast?  It has eggs, eggs, eggs, tortoise lung, eggs, eggs, eggs, and eggs."

So you take the Yeti Meat and put it through a grinder, then stuff the resulting ground Yeti into the hollowed out heart, making a sort of beefy... organ.

Roll that in some syrup. Make sure to get it all over. Yeti meat is mildly spicy, so the light tang of Dwarven syrup works best here, though other syrups may be used. once the heart is lightly covered in sticky syrup, dust it with whipvine flour to really bring out that spicy taste. Bake for thirty minutes in a authentic wood oven on low heat, and serve before it turns cold.

This one is almost normal compared to some of the others, but what do people think of this one? The cook seems especially fond of this recipe. I imagine a cut of crundle meat is marinaded with the apricot wine then garnished with artichokes, with a little dinner roll on the side.

Foods that are nearly all tallow may be real, but Pemmican (from your link) is usually only 40-50% tallow, with the remainder made up from dried meat, and sometimes dried fruit as well.

I'll get to work on this one.  But looking at some Crundle fan art, I'd imagine crundles would have tough, durable and lean meat, and taste a little like chicken, or dog.

This thread encouraged me to take a closer look at what my dwarves are cooking. I'm... disgusted and fascinated at the same time. Dwarven kitchen is truly wild and wonderful and I'm tempted to start writing down recipes.

I mean, chicory, giant olm meat and kaniwa flour mixed in tallow? I'd imagine that's a kind of travel ration. Or chimpanzee heart, forgotten beast meat and dog tripe in pig intestines? That's the heartiest sausage I've seen. Plump helmets, yak cheese, purple amaranth leaves and lettuce? A very nice salad.

Most of the things they cook fall clearly in the "ew but wow" category but there are some that sound like real food.

On the contrary, chicory can be used for its leaves in salads, so you're talking leaf, meat, tallow, and flour.  Basically, this looks like something that is wrapped in crunchy leaves, breaded, and deep-fried.

Or chimpanzee heart, forgotten beast meat and dog tripe in pig intestines? That's the heartiest sausage I've seen. [/qoute]

Yeah, definitely a sausage.  Just like a law, it's perfectly fine if you don't see how it was made.

Plump helmets, yak cheese, purple amaranth leaves and lettuce? A very nice salad.

If it weren't for the heavy leaf component, it could be a mushroom saute.

Also, remember that flour can be made into things like noodles, so a flour and eggs (as I get alot) could be something like a noodle bowl with egg on top.

Egg can also be used to make mayonaise with vinegar (so let's just presume it's "cooked wine"), so my turkey meat, purple amaranth flour, turkey hen egg, and turnip wine roast could actually be a turkey sandwich with mayo.

Salt and water and other basics are not ingredients, either, so you might assume they're available and there may be soups and such that are being made with ingredients that aren't obvious.

My bad, I was imagining it was chicory root which I seem to remember being used ground as a coffee substitute in real world. So basically I was thinking that one would be a breadish, very greasy meal bar that will sit in your stomach like a bowling ball.

I'm starting to wish Toady would implement cultural cuisine and food recipes at some point... It would add a lot of atmosphere to the game.

He's mentioned it as something that he plans to do, and I expect he can use a lot of the same framework as entertainers and scholars. Cultures already (in the next version) have music, poetry, and dance styles, no reason that this couldn't be extended to cooking styles with a bit of additional work.

An elf diet would consist soley of mangoes (https://en.wikipedia.org/wiki/Fruitarianism) and would be about as healthy as surviving solely off of mountain dew.

Dwarf food would consist of lard.

Human food would consist of McDonalds.

Goblin food would consist of stolen food, and the people it was stolen from.

This is an exceptionally prepared egg roast.  It is prepared using the traditional methods of the menacing Mechanisms, a dwarf civilization, distinguished by a heavy use of deep frying and sugar.

Hey, I found a picture of your kitchen!

That turns out to be from a fairly obscure Dr. Seuss (https://en.wikipedia.org/wiki/Dr._Seuss) book, Scrambled Eggs Super! (https://en.wikipedia.org/wiki/Scrambled_Eggs_Super!)

The tale seems rather dwarfish; a cook has a mad inspiration, travels the world for exotic ingredients, and creates a Planepacked-like scrambled egg dish comprised of eggs from a bizarre variety of exotic species.

So a giant black mamba heart, some camel cheese and some giant olm tripe.

I imagine the chef melting the cheese, then coating both the tripe and the mamba heart in it and deep frying both ingredients. With the leftover cheese you make a simple dipping sauce, and finally serve as an appetizer.

polar bear liver: Lethal amounts of beta carotene
Pufferfish meat: Fugu is lethal if prepared improperly
Vodka: Is vodka
Monkey brain: Good way to get a spongiform disease.

I'm guessing that's the point, though.

Also, have you ever made bread?

There's actually a lot of things that would make "bread" if you grind it up into flour, first.  Yams and taro, for example, can make a type of bread.  It wouldn't have the same consistency as wheat bread, of course.  (Actually, sweet potato bread makes a much softer, sweeter bread, although it has that annoying sickly sweetness that makes me not like sweet potatoes in the first place...)

In addition, could also try to give the meat a different "texture" if that makes sense.  I know fish looks quite rather different compared to steak.  Also as mentioned by Minty, color is another good way to go about it.

Aaah. Started wrong on the nautilius, and can't draw goddamn sliced onions. Went about this all wrong. Meant to be a cross section of a nautilius, with "light" dwarven seasonings scattered on. Because obviously a cook would make this by chopping the nautilius in half horizontally then throwing stuff on it.

Can dwarfs get diabetes?

No (it's weird, huh?).  Also, eating a bunch of sugar one time would not give anybody diabetes.  There are three ways to get diabetes:

Type 1: Nobody really knows, but viruses, the environment, and genetics probably have something to do with it.  Nothing you can do to stop it, nothing you can do to cure it, at least right now.

Type 2:

a. Genetics.  If you have a family history of type 2 diabetes, you are much more likely to procure it.

b. Obesity.  This is what people think of, mostly, when they hear about diabetes.  The claim that sugar can cause diabetes is a misunderstanding of this: eating sugar all the time is a bad diet.  Bad diets can cause dieties obesity, and obesity can cause diabetes.

----------------

Basically, TL;DR: Eating a lot of sugar one time does not give people diabetes.  Eating a lot of sugar all the time might.

One demon = 1/2 a horse?

Or is this a mistake, and each serving weighs that much?

Servings are all the same size, and keep in mind that it's the meat from 4 demons.  So the organs, fat, tendon, skin and bone are all missing.

In people, muscle mass % goes between 28% and 54%.

That means you'd be looking at "4 whole roast demons" weighing between twice or quadruple the mass.  Even more if the demons are not particularily buff.

Are you sure 1 urist = 1 kg? I guess it might make sense...

Might do a drawing for this one.

Yeah, the sizes of the demons in meat were 400, 300, 150, and 100. I'm going to start a demon breeding operation at some point, so I'll be able to make even bigger roasts in the future.

EDIT: Whole roast demon is a bit of a lie, since it's only the meat I've been using.

Pretty damn good. Is that a demon in the back, though? The only demons that pass the Hell Bastion (the hell wall) are in cages, so that's a slight inaccuracy. Other than that, you got it spot on, right down to the shape of the Hell Bunker!

When I say: How I mentioned how I imagined it, I meant as in your attitude toward it, rather than how it is.  A big money fountain rather than, well. Hell.

But that works too.  And there are two demons, one One-Eyed Brute, and one generic demon because I knew one eyed brutes only.

Yeah, OK, but I'm not in it for the money. I'm in it for the fame that having a demon farm will bring me.

Now I'm imagining dwarves roping demons around the horns from the backs of giant bats.

I imagine the forgotten beast roast to be a large Rump roast, braised in wine, coated in melted cheese and adorned with wild carrots.

I imagine the dwarf heart roast to be a sentient sausage with an eye.

I can't imagine even dwarves eating this, except maybe as a dare when the party has already went on too long:

This is a stack of 23 exceptional prepared prepared giant louse intestines roast.  The ingredients are exceptionally minced elk bird tallow, exceptionally minced chopped rutherer liver, exceptionally minced leech meat and exceptionally minced prepared giant louse intestines.

Speaking of which, I think I've found the dwarven morning after remedy:

This is a stack of 48 exceptional prepared dwarven wine roast.  The ingredients are superiorly minced giant python egg, exceptionally minced dwarven wine, exceptionally minced dwarven wine and exceptionally minced dwarven wine.

The One eyed elf sausage?

I left it on the backburner, it looks as if it turned into a fine powder of ash.

I forgot to draw it, and I'm pretty tired right now.  I'll see what I can do.

Not possible.  Prepared meals must have at least 1 solid ingredient in them.

It is very possible to have a [76] +Dwarven sugar roast+ composing of 75 dwarven wine and 1 dwarven sugar. However.

I wish my rocs would breed properly so I could butcher them for expensive, delicious meat.
