My moats become terribly clogged with debris and just generally people, mostly guests wandering into my moat and drowning or becoming permently stuck if they can swim until they get draw into the pipes.
Other than emptying the moat periodically of water and clearing it manually what is a good way to prevent people from wandering in in the first place.

You build a small wall around it, or just fill it with magma and melt anything that falls in.

there are options to set pathing restrictions, I believe found under the designation menu. If you set tiles to 'restricted' cost, dwarves will generally avoid that ground unless forced to cross. setting the space near your moat to restricted might keep them from getting stuck

If you want to get really fancy, you could create a series of bridges covering the moat entirely, linked to a single lever. Then you could pull the lever to activate the moat when invaders appear. You could even wait until they're on the bridge before pulling it...
