Ok I genuinely don't understand why labors are working the way they are.

I *thought* that if I set a work detail and then selected "Only selected do this" that I would be able to control who was doing masonry. But for whatever reason, this only works if I tell *all* of my dwarves to be specifically specialized to only their work details? Which seems to defeat the purpose of anything.
I'm really *trying* to get into the new dwarf fortress but it feels like every five minutes I run into something like this that makes me want to dropkick new DF out of my window. What am I missing?
See: (this is before I set all my dwarves to specialized), the bowyer is *not* part of the work detail for masonry.

In the Steam version the skill that used to be called "Masonry' is now called "Stonecarving" and the skill that is now "Masonry" is what used to be called "Architecture". So Masons will build a trade depot out of wood, but they won't carve a rock coffer.
In general though, the key to understanding the new labor system is that work details are mostly irrelevant beyond the preset ones, and who does which jobs is now set primarily from the workshop menu.

Not quite.
Architecture was split into labors that are performed by other professions. So Masons will build a trade depot out of stone, Carpenters will build it out of wood, and Metalsmiths will build it out of metal bars.
To expand on stoneworking changes:
Mason - stone architect
Stonecutting - make rock blocks, smooth walls, carve fortifications
Stone carving - make stone furniture
Engraving - engraving walls and slabs

Make your own custom labor that includes both « stone carving » and « masonry » and call it « stone working ». Check any dwarf that you want to do these labors and select « only selected Dwarves do this ». It works fine for me.
