I regularly use DFHack to mass-slaughter my dwarf(s), and maintain a relatively low population.
It's a good source of meat/fat - I wish you could use the bones to make tradeable commodities~ :-\

Unfortunately, we can't milk our women... It's a game-balance issue.

A dwarf female is a renewable commodity, and capable of producing a significant amount of milk in its lifetime - It would remove the need for any other kind of livestock~ :-\
The dairy industry would unbalance the global economy!
