Can someone explain to me why so many people say obsidian is valuable? I don't get what is so great about it. I had a map covered in obsidian on the top layers and I never found it to be any better than the other stones lying around. I'm guessing there is something I'm missing.

In-game wize obsidian is far more valuable than other stone. Check its article at the wiki.
Plus it can be used to make obsidian swords.
That's pretty much it, most people make obsidian stuff just for the fun, as it is the byproduct of magma+water.

Quite literally, just for the Fun.

Griping with the military, but it seems to be working.  Next thing is to try my hand at building a hospital.  I understand that proximity to clean water is important, so the project is going to require a gigantic damn tunnel from the brook to my future hospital, so I can build a well.  Maybe a cistern, but that's not too important.  It shouldn't be difficult, just time-consuming.

It's taking me longer to set things up for my dorfs than I expected.  I'm only just now designing bedrooms, and I haven't even gotten around to rigging up the floodgates to make mud.

I go for impressive structures rather than challenge builds, personally.

I don't know if this is too easy for you, but why not build a waterfall?  An enormous pump stack, starting from underground water sources and taking it high into the air before it gracefully descends.  You'd have one-up on me, that's for sure.

Or an aqueduct!  That's all kinds of impressive.
