It comes down to the fact that I don't enjoy eve's combat. In the end, it feels like generic mmo-style combat with a little added depth in the form of transversals/distances.
Honestly, I don't think you ever experienced EVE's combat outside of missions and PvE stuff, the excitement's in the PvP. EVE's PvE is the boring stuff you have to go through to fund your PvP fun.
I respect your decision to quit though, been considering it myself.
Personally, I believe an important part of a game is how interesting it makes working to your goals to be. So having to go through boring stuff to get to the "fun" is already a minus, the path should be enjoyable in its own right. Especially if they're charging you for it.
The fun (well, I'd call it more engaging than fun, whatever ^^) in eve's combat is knowing that what you're fighting for means something. You feel like something is actually at stake, and you can't just try again if you screw up. You also know that the other guy feels that way. I know this feeling from other games (and competition in general), and yeah, it's quite enjoyable. However, when it comes down to it, the core combat mechanics are boring to me. And considering the number of other games that can provide this rush, I'm happier choosing the ones that I love the core mechanics of (and don't have to subscribe to, but I really wouldn't mind if I felt it was worth it).
I'm playing a lot of warframe lately. It's a nice change of pace from the pvp games I tend to play, and the developers are quite transparent about things, which is always a plus. Also, space ninjas.
