DF Gameplay Questions / What is your fortress workforce breakdown?

I considering to use decentralized living quarters in my new fort, with sort of farming/soldier cast etc. But I am struggling to recall my workforce breakdown from previous games.

Any examples or rule of the thumb on healthy workforce breakdown ?

In the past, I made basic use of minecarts mainly to save haul time moving heavy raw resources from top to bottom of the fort. This time around I'd like to better integrate minecarts in my industry design.

I usually build my forts as multi z around central straircase but I am looking for any examples of minecart use that improve production workflow (industry/stockpile etc). So that I can have a rough idea how much space to pin down.

I'd like use mincarts to help bring up materials up/down and eventually lava. Is there an example of using a spiral shaft with Rollers and does the impulse ramp examples at the wiki are still valid?

The entry I read about savegame seem a little confusing, i'd rather not waste time on this and have the most optimal compression. Is there any easy to use tool that archive a savegame?

DF Gameplay Questions / Petition and citizen request how?!

Petitions are extremely annoying, since you aren't given any information on the applicant nor able to focus on them. After a while I just decide to accept everyone (I can afford it) and wait for the citizen request and use therapist to get more info. Which worked fine until now, I have a citizen request from someone who isn't listed in therapist, nor shown in the unit citizen/other/dead section, manually I can't find anyone in the inn with that name, nor my nobles are meeting with anyone.

What am I missing? and is there a better way of doing this?

Can I automate things like alcohol/food production and wooden bots for training?

What I have been doing with various task is

* Add work order (j,m,q) for what I want and add condition (c,a) 
* Change frequency to once a month.
* Change to validate if there is less than X items.
* Try to set the item material.

The problem I encountered is that there is no way ( that I could find ) to set group materials

* No way to order 'brew from plants' if there are less than X alchool/ale/wine whatever
* Same for food.
* Same for any other group, like choose wooden bolts, you can only choose any bolts or bolts of a pecific wood type.
 
Am i missing something or is automation here is out of the question? If the later is there any dfhack tools for that?

Is there anyway to filter/sort the unit list(u) dead/missing section to show only those units which are deceased and wasn't put to rest, and zoom in on their body location to figure out why?

Also on that list, what does it mean when unit names are blinking? I have couple of deceased soldiers whose names are blinking, and I know for a fact that they are buried in a coffin.

Whats going on? I have built a curtain wall, with archer towers and broad ditch 3-5 wide and 4z high that goes into the stone layer, with smoothed bottom layer to avoid climbers. So how did their units flew to the walls  and now seem to melee fight with my archer in mid air?!
