DF Gameplay Questions / [0.47.05] Where to put my traps?

I want to better defend this entrance. Where should I put my traps? Outside, or inside? If inside, how to put them in a way that don't block access to trade depot?

DF Gameplay Questions / [50.08] How do I make sure there's a hill on the embark?

Sorry for the noob question, i've played classic DF for a little bit and there you had the elevation map by pressing tab but I can't find it's equivalent on steam edition's DF. Is it "show elevation" or "show cliffs/grade"? Because the world seems to be all flat in both of these option. What's the difference between them?
