DF Gameplay Questions / Getting rid of a magma pool.

I've got a pipe and a pool on my map. What's the best way to get rid of the pool?
My plan was to pump from a stream straight on to the top of the pool and just mine it out. But, I"m wondering will that just turn one layer to obsidian or the whole pool at once?

Once a barrel of booze is drunk from, does it become empty again?

I'm trying to get an equilibrium with how much my dorfs eat and drink.

I started an army with four squads with seven soldiers. They started on a screw pumps to toughen them up, then sparred as wrestlers to get them fighting fit. They all got to Champion fairly quickly except one guy, who stayed an Elite Wrestler. From what I've read, he won't train any higher because he's got a lower spine injury.
What I tried, was to take all of my caged goblins and let him fight them a few at a time, just to get him to level up to Champion.
Except, the son of a bitch has been hospitalised four times, has a hundred and eleven kills, and is still an Elite Wrestler.

Will he ever become a Champion?

DF Gameplay Questions / What's happening to my dwarves?

Some of my dwarves are dying for no apparent reason. Three or four now have just died from wounds with no apparent cause. I had the messsage dwarf has stopped work resting injury and I found the guy near the Leatherworks. There was blood all over the shop, and he's all busted up and covered in blood and puke. He managed about six steps the died in a stairwell. I can't figure out what's happening, my first thought was a Hammering, but the Hammerer doesn't have any kills.
Can a dwarf be killed by a workshop?

I'm starting my first new map, and first new fortress. From what I've read of starting builds, I should be taking some turtles. But, I can't find them in the item list. Am I completley mental or are they sometimes not an option?
