DF Gameplay Questions / Stopping dwarfs from entering a room

Hey guys, I am not very new to DF but I am not very good either (if there is such a thing as being *good* at DF). I have got two instances of *fun* in my fort. Both were caused by dwarfs that were entering rooms they weren't supposed to.
1. Goblin pit. I dug out a pit for my goblins; the goblin cages were placed on an animal stockpile above, then I pitted them into the pit below, this went all well. The room was carved out with fortifications so my marksdwarves could train. However, civillian dwarves continuously tried to enter the room and pick up goblinite or perform some kind of task, and then dropped all their stuff in fear of the goblins, which was picked up by more dwarves who got scared and ran away dropping more stuff etc. I tried to forbid all the stuff in the room, but they always found some sort of task to run into the room, so it worked only temporarily. And locking the room would disable my military from getting in and out of the room. Setting a restricted traffic area also did not help. How do I stop civilian dwarfs from entering a given area?
The military also just shot their 3 bolts of ammo, then just stayed there gazing at the goblins. They don't run back for more ammo, then proceed to shoot. Nooo. How do I make them do this?
2. Goblin trap corridor. I had devised a nice trap, that shreds goblins to pieces and/or pushes them into an inescapable water pond, letting them drown. It worked fairly well. However all my dwarfs path through this trap corridor to go outside to do things ! Obviously they were slaughtered by the goblins one by one (though about 7 goblins were killed by the trap, the remaining goblins waited at the entrance, the trap was jammed because of the loot/corpses). This brought down about 50 dwarfs. Now I just locked the path with floodgates, but that's not very convenient because I'm now locked into my fort.
Again, if there were some way of stopping dwarfs from entering a room (while still being physically possible, so enemies attempt to path through and military can enter as well) that would be swell.
I can think of one and only one possible solution myself; assigning a burrow across my ENTIRE fortress (except for the trap corridor/pit), and assigning EVERY dwarf to it. But isn't there an easier way than this?
