DF Gameplay Questions / DF Therapist: Workforce Organisation

So my fort made it through the first year, my population is growing and i think its time to assign them proper jobs.
Till now i ignored labors pretty much besides some minor adjustments.
My question is should i create a "hauling caste" and leave it to them shifting the goods around? Or keep everyone on the task?
While i like the idea of having a slave population doing the dirty work while my craft dwarfs are busy, im not so sure if it would be efficent.
As my industry becomes bigger is also becomes more diverse. Leaving less minions on the task.

So after much fun I managed to set a setup a fortress that works.
Food and booze.. check!
Wood, Stone, Crafting goods for trade... check!
Defense that kill enemys dead!... uhm does vomiting and bleeding count?

As you can see I got the basics covered problem is I have no idea what to do now.
My dwarfs are fighting with crossbows/wood bolts so getting metal seems a good start.
I started iron production but progress is slow 2 metal bars after several minutes ingame.

But truth be told I feel overwhelmed with the options DF is giving me. Im not sure how to develop my fortress and which path to take.
Any ideas? Oh i have already consulted some guides but Im still confused.
