DF Dwarf Mode Discussion / North and south?

I've always been a bit confused about DF world maps. Why is the "top" always hot, and the "bottom" - cold, and not the other way around, as it would be on a real world map (of Earth, I mean). Which kind of leads to one more question - are DF worlds round?

...so I walled him in. But he was bitten in 25th of Granite, now it's 22nd of Felsite, he should have transformed twice by now, if I understand correctly. Should I, like, apologize and let the guy go now?

Well, subject. He's not on the unit screen, he had no time to reach the edge of the map, because I unpaused game for, like, 3 seconds. In these 3 seconds he bit one of my dwarves, was shot by another, turned into his "normal" form and then just vanished completely. He was heading right for the cage traps, so I'm a little disappointed.

I think I've never built one-tile-long bridges before, and now... do they really look the same when raised/lowered? And how, if I don't remember... man, I feel stupid. I'm playing vanilla DF (no tileset). I can figure it out by looking at levers, but it's really inefficient.

Some legends mode reading led me to some unimportant, but intriguing questions.
Why is the first general of any Dwarven civ almost always a necromancer? Why are there no more necromancer generals after him? Why are there no necromancer kings/queens?

In game terms, I mean. I know this is what vampire rulers do after they kill somebody and raise suspicion, but what is it? And if I, say, have a vampire king in my fortress, he kills someone and is noticed, can he lay those edicts on my dwarves?

I wonder, if I'm the only one having this problem, but much as I would like to have a working milk/cheese industry, I simply forget to milk my animals all the time. I guess it's not a problem when you have enough of milkable animals to sustain a permanent "Milk Creature R" task for (at least one) Farmer's Workshop, but until then it goes like this:

me: "Milk Creature R"
Urist McMilker cancels the job: no milkable creature
me: "Shit, ok, have to wait. Let's see what I can do meanwhile... Oops, a year has passed".
Completely ineffective. And how often can I milk an animal anyway?

Same goes for shearing. Perhaps, that's when I need to use manager screen? Don't use it at all, to be honest.

My current fortress is quite nicely located on a cliff (I only had to remove a few upward slopes for further impenetrability). But the very first immigrants arrived from the direction that was inaccessible in the first place, as far as I can tell. Had to build a bridge for them, never used it since, stays retracted. Now, two years later, the last wave arrived from behind the river. That river does stay frozen for good half of the year (I had a dwarven caravan arrive from the same direction while it was frozen), but those stupid dwarves arrived in Malachite, so I'm building a bridge again (3-tiles wide, just in case caravans are stupid too). Screenshot is included.
Is that a bug, or known behaviour or what, that bridge building is starting to annoy me. I'm a low to medium experience DF player (had about 20 fortresses but yet to survive my first siege) and have never seen this before, migrants always arrive from reasonable places.
