DF Gameplay Questions / [0.23.130.23a] Grid size and FPS question

Hi evetybody!
I'm playing the latest version of DF and I'm happy with that, BUT I'd like to try the so-called 2D version (back to the root of DF!)
Here my question: is it possible to increase the grid size, or I'm condamned to view just a tiny part of the mountain? Does anything like a "zoom-function" exist in version 23a (like the mouse wheel in version 34.11)?
I'm using a 1920x1080 monitor, and I have double-checked the INIT file looking for any clue... without success.
Another quick question: i have set the FPS cap to 200 in the INIT file... but the game sticks to 60 fps, which is my monitor max G-FPS. In version 34.11 I can set my FPS using DFHack to 300 if I want, and it's ok. Why??
