 -Send an adventurer?
 -Send a raiding party?
 -Settle a new fort nearby?

There is always a grand vision:

An elaborate catacomb adorned tastefully arranged, intricately carved, and appropriately themed statues.
Carefully constructed memorial slabs that celebrate each individual, and their contributions to dorf society.
A place of respect, and reverence, such that every dorf may find solace knowing that their struggles will be immortalized, that posterity will strive to live up to their example.

What happens?

A crappy box hastily shoved someplace.
RIP ..  uhhhh  ... that one dorf.

I think the dorfiest way to deal with the caverns is simply leave them be, ie just open them up to the side into your pit. With some nice overhangs and smoothing nothing should get out except fliers, and some marksdwarves should be able to deal with those. If a flying FB shows up, hope that your marksdwarves are up to it :)

If you're still digging a bit pit, here's a suggestion:

Scout out the caverns before your excavation gets there.

This had slipped my mind, but I lucked into it digging a drain for the well.
Here's to hoping there's a enough rock at the bottom of the pit for some controlled cave-ins.

Remember that wagons need a path of three tiles to the trade depot, without any doors, traps, or pressure plates as obstructions.  That will probably be the main stumbling block.

I tend to use a trade depot airlock. Once all the wagons are in, and the merchants are unloading the goods, I'll seal them in, and open the drawbridge that allows access to the fort.

I like starting in the caverns, I think they give extra style and I dislike hugging the surface - I'm not a hobbit, darnit :). It also allows you to start with only a pick and an anvil, anything else you ever need is down there.

This is my current fort, with the remains of the cavern floor mostly floored over. The fort itself is a combination of traditional digging and some built structures, notably the dining hall and barracks.

Very dorfy. I like this.

(this is occurring on 34.11, in hopes of attracting a bit of goblin attention)

I've been embarking upon this endeavor with you, and am pleased with the progress my dorfs have made.
We are on year 3 and have finally reached the rock layers of the ~60x80 tile pit (should have brought 3 miners, no mason.)
Here's the farm layer (with sunlit booze stockpile):

There have been a few minor injuries during the excavation, but after the lead miner's left hand become horribly injured, I think I know what may be causing the problems.

This thread (http://www.bay12forums.com/smf/index.php?topic=102632.0) discussed the safety of undertaking a large excavation such as this; there was a bit of controversy regarding the necessity of removing any residual up-ramps before designating the next layer for channeling. I think I might have cracked the mystery.

It would seem as though an empty up-ramp designated for channeling will not collapse when pick meets stone.
However, should there be a chunk of stone (or 3, as tends to happen the deeper you go) occupying said ramp, they will fall on some poor dorf/dog/baby/cat when the miner gets down to business.

Plumbing.

I like to have a large reservoir (possibly above ground water tower) to supply pressurized water to as many well rooms as possible.
All wells should be auto-fill without possibility of overflow. Also all wells should be drain-able for cleaning/maintenance.

My latest addition to this goal has been to have a "water main"
A large pipe with separate sections that can be sealed off and drained with a lever pull to accommodate new connections,
while leaving the other sections pressurized.
This has not been easy.
