DF Gameplay Questions / farm help

I have made a couple of fortresses but none of them have survived the first winter very well many dwarves starving going insane.....so and so and so but i tried once digging out all the standing water around a new one and it did ok but was slaugtered the second year by golbins but i digress i found that farming to my stupid amazment could actually help me out... now i read the wikis and all the advice i could and would find now i would like some help. i dug a channel from my river to the inide area where the second fully hooked up flood gate(flush with the wall but still completely undground) with a second one also hooked to the same lever in an ajacent room. now i have water ready to flow through the gates and into the room which is sealed with tightly locked and forbidden doors (how do the pets know not to go throught forbidden doors) and i have a dwarf flip the switch and then.....nothing
it just turns into normal tiles nothing happens sept wasted time and wasted resources
please help me

one more... or ten i dont know this game keps throwing me curver balls... but i have dug a channel from the near by river and have gotten it to the hole in the groun i hope to pump it into. inside there is a nice 6by6 area that is supposed to be my "farm". now i get the flood gates slightly inside with a channel leading up to it and i have it "linked" to a lever. i have a door leading into the room locked tight so no one will enter and get killed. and i activate the level and....nothing ...the flood gates just sit there then turn into normall tiles. NOTHING HAPPENS

I have fianlly gotten my guys to make a flood gate and all that jazz to make a farm...then one ..then two of them just stands there where the channel is and then after a while they get this weird down blue arrow

Oh...really so the needed object of water isnt garentted to be there...oh ...maybe "SOMEONE" should fix that on the wiki which said it was there no matter what

Thank you all for your help i have moved to a new area that i now can go up and down in i have them doing mostly well i have no water tho which sucks no rivers or anything but plenty of beer and i dont have any (so far) dangerous animals yet thank you once again for the help

well it turned out to be a colosus which is crap and i liked that place too. but thank you for the acessing new levels tip i can finally mae it 3d but they dont do anything with the stair cases and i still have no clue why they wont build anything i tell them to lazy bastards

Hello I am a shamless newb and would like some help on a few things i cant to save both my own and my dwarves lives seem to figure out these questions
1. i cant find the underground river to save my life.
2. The starting area i ...well start out in seems rather small compared to the MASSIVE areas i have seen on the internet how do i expand.
3. Z Axis you say what is that and how do i use it.
4. WHy is there a big C killing all my dwarves like they where legos to lava.
5. How do i set other oders it only lets me check the ones that are already set i want one dwarf to only take the crap my miners dig up to stock piles
