Uh, this isn't river ice. It is the whole-map-is-covered-in-it continental ice. Do bridges work on that? I'll try it.

The problem is that they will not stop hunting for food eve when there is a sack of plump helmets right in front of them.

On maps where there is no vermin to be had, some dwarves like to keep hunting for it, even when there is plenty of other food around. They then starve to death.

It seems that whenever dwarves build channels leading from the cave river, the end up getting sucked into the cave river and dying.

Currently, it is impossible to detail metal ore veins or gem veins. From my limited understanding of geology, this doesn't seem right. A vein would not have any significant differences from rock/stone in respect to detailing/fortifications, would it? If so, this still has a pretty negative impact on anyone trying to create an ordered fortress.
