DF Gameplay Questions / How to get rid of boulders

How to get rid of boulders? I want to create an abovegound farm but I don't know how to remove them. It seems that "smoothing" them doesn't make the area farmable.

Also, will farm plot placed on dirt roads lasts forever? Will grass stop growing on such tiles?

How can I satisfy the following needs:

- "He was uneasy after being away from traditions for too long"
- "He was uneasy after being unable to pray to xxx for too long". I have a temple in the fortress but maybe this is because this dwarf is in the squad that trains constantly. Am I right? What can I do then?
- "He was uneasy after being unable to aquire something for too long"
- "He felt lonely after being away from family for too long"
- "He was uneasy after a lack of introspection for too long"

Sup guys.

Is there any way to restrict civ dwarves from accessing an underground cave w/o setting up a burrow? Because if I assign them to the burrow that covers all Z-levels the game will constantly spam messages like following:

Sup guys.

I want to build a well over an underground lake that looks like this:

where w is well, o -- open space and ~ is water. So basically there's one empty Z-level between well and water.

My questions are:
- Is this empty Z-level required when building a well? Can I place a well directly above water (one level above it)?
- Is there any chance that underground animals will come to my fortress via such well? Which ones exactly? Those who have climbing skill decent enough to climb these empty Z-levels? And what should I do to avoid it?
