Somebody explain to me tho why this taking a long time would be a good thing?

The purpose of a siege isn't generally to prepare for an assault of a castle, it's to starve the defenders out. The longer the siege, the weaker the inhabitants of the city become, until they either surrender or, in very rare cases, refuse to surrender but become so weak that the assaulting army is able to just walk all over them in an assault.

Re-reading the update, I think I'm actually going to change my choice. Maintaining the siege seems the smarter thing to do.

From what I gather, we've killed all the scouts that could report our presence and their army is very poorly prepared and full of peasants. The numbers might be against us, but we have far superior troops and the element of surprise. Waiting will only give them time to prepare, we have to strike before the numerical advantage turns further against us or other nobles decide to side with the rebel Count.
