i have not played a freezing map in the latest version, so i dont know. but it does sound like something went screwy with an attempted mod.
also, setting everyones speed to 1 will slow down the game, considreably. sure, more will get done in less time. dwarfs will move very fast. but time will crawl. seasons will take forever to roll over. and any events you might be waiting for, well they we be awfully slow in coming.
a few elephant traps, and you'll be swimming in meat, leather, fat, and bone. i've built entire forts on the elephant industry.
i have recently been trying the "naked dwarf" strategy of letting their clothing rot off, and then having a happy nudist colony. it isnt working. or rather it is, but my dwarfs are becoming unacceptably unhappy with their worn clothing.
they have plenty of royal-common-rooms, and other things to keep them happy. but i've just got too many unhappy dwarfs. so i recently started building a little clothing industry with one-piece outfits and stores to sell them.
seems to be working so far.
i get very few dwarfs wandering outside... but they still do it every now and again. i cant lock my doors without causing problems, but i do often tell them to "stay indoors" unless there is something i need them to pickup or harvest out there.
i think what will fix this, is when Toady implements the "buroughs" feature which limits dwarfs to a section of the cave.
that way whenever a dwarf wants generic ore for a mood, he will pick the nearest one, which will be the adamantine stuff.
also, you have to order a workshop to Extract From Animal to get that ivory out. Regular bones are not Ivory.

or some similar variant.
or you can bring lava over the chasm or the river by building an aquaduct. if it melts, try building it out of steel instead.
artifacts (even non-weapon artifacts) do a huge quantity of damage when you hit someone with them. also, the creator should drop it after a few years. this will allow you to place it as part of a room, and increase the value of the room for nobles or the king or whoever.
"royal" quality rooms make dwarfs who use that room happier, so having an artifact bed in your barracs is nice, if not a little silly.
also also, they add to the overall wealth of your fort, which has various advantages in attracting certain types of nobles and such.
dwarfs never use small, narrow, or large equipment. when you have a bookeeper, he can designate individual items to be melted. until you have said noble, the "melt and item" order has no function.
i dont know though, cause i never tried it.
2 - dwarfs sometimes clean, if they have no other jobs, and they're really bored. if you're lucky. having a couple pesants do nothing but clean may help this. maybe.
3 - i wish.
you just have to accept that they wont be as effecient as they would if you managed them individually, but that the effency loss is an acceptable trade for manageability.
if a waterfall (and no other river square) is breaking through your wall, it will still flood through.
i had a setup like that, and it kept flooding into my dining room and mudying the engravings. i had to put statues in the breach to block the floods.
