No, there's no preset "timer" with pressure plates (or anything else for that matter)
There are two ways of getting around this. The first involves using no-quality mechanisms. These will give you a longer delay. For a shorter delay, use masterworks.
The second involves a long hallway that slowly fills with water when the main pressure plate is triggered, which eventually triggers a second pressure plate at the end of the hallway. This can be adjusted; for a longer pause, use a longer hallway. It might be possible to use magma(which is really slow) but you would need bauxite for that.

. Yes, I was planning on keeping him; at the very least, he could serve as my bodyguard, or perhaps as a red-shirt (read, expendable person). The question about world-shifting, though, is a little more difficult. I'm guessing, due to your question, that just having him stand next to me when we shift won't work. I might try to figure out some way to give him a headband, since it's made out of energy, perhaps my headband could form another one? I would have to know what the requirements for world-shifting are.
