Q'uaksna most this damming is people being cheeky. We all love you its just easier to joke than say you care and its funny to some people.
The Catholic church was founded by romans the snake worshipers. As long as you don't do any harm to people, no sacrifices of children or other fucked up things that are part of the priesthood we all know what im talking about, you are all good. You definitely shouldn't let a religion form your being though. It shouldn't be a part of your truth. It is an ideology invented so the invictus could kill rape amd pillage then pay a religious tax ie confessions to be right with the army.
Sure you may feel good from releasing 'sin' burden as we all do but as you get older and your opinions begin to stray you will see that religion is a control scheme to prevent you from having a true religious experience, that is for the priests to indulge in and report back to the masses.

What is right? Seems like we get to decide. We should have no say in matters of rights. There's a mushroom which grows in the ground and it's illegal for me to eat, it creates more neural connections, empathy and is a better neural transmitter than serotonin.

Yeah im sure its trademarked. Even the stem can shoot of rhizomes because the mushroom is just modified myceila. I've done it with many woodlovers.
I'll agree with the strains being used to eating birch but that's most probably just advertising, all mushrooms can be taught to eat a variety of foods as long as it has what they need and their enzymes can break it down.
Shit if you really wanna step it up chuck some onto nutritional agar and sector the best rhizo.

Coffee is ok as a nitrogen supplement especially for oysters as they eat nematodes for their nitrogen, but as a whole unto itself food source it takes fsr too long to colonise best way is for a multitude of foods like us they get bored of eating one type of food.

The thing with saprophytes is they can grow on most things with lignin and cellulose as long as you can remove any competition with fungus and bacteria. In any case straw with oats could hypothetically be used, anything with sugars and proteins in it are prone to contamination.
Test this, get some corrugated cardboard, soak in hot water, separate the corrugation, put the myceilal fluffy end bittys on it and sandwich it with the cardboard. Put in sealed container and check on it in a week. If theres growth you can be pretty confident in using a variety of substrates.
The rest is knowledge im sure you are capable of finding and perhaps you'll one day move onto bolder exotica like cordyceps and others to further improve your intelligence.
The path is wide.

Your lucky that you have some sort of market that sells various species. I can only get portabello which I don't really enjoy. That's why I grow my own oysters and subaeruginosa.
@weird have you considered trying to grow your own? You seem like you could do it with ease and probably enjoy the results of this hobby, they are saprophytic so should be easy to grow.

It's this simple. Everyone in my town mows the lawns, the council mows the burms. A low to ground prickle flourishs and flowers are decapitated.
I stopped mowing my lawn, flowers encourage the bees and the long grass shades out the prickle weed thus killing it, the insects love the wild lawn and with the straw I can grow mushrooms, with the insects the birds come and they eat the white butterfly thus my crop is rarely decimated. My soil is incredibly myceliated and retains water. My garden is happy. I can feel it.

Humans do things that make no sense to the betterment of themselves because of our continually adopted culture.
Cows are not smart. Go back 500k years and meet the aurochs of then. We bredd them to be stupid too.
Dogs kill beyond their means unlike the wolf.
Sure we are smart but we don't often look beyond our short life spans and our eternal cultures we cling to.
