DF Gameplay Questions / Two-handed weapons vs one handed

Just wondering, have any tests been done to find what is most effective out of having your soldiers use two weapons, one two handed weapon or a shield with one weapon?
I imagine that using a shield with one weapon is most practical since you train shield skill as well as a weapon skill, but don't dwarves gain ranks in weapon skills faster if they have two?
What's more effective from a combat point of view?
Also a misc. fun question: has anybody tried duel-wielding crossbows? Does it work?
