I believe that chained animals can be adopted, and they won't be freed by the owner.
What I would suggest about the butchering problem is to make the first page of the animals screen your chained animals, then you can keep track more easily because new animals are added to the bottom.

Basically with the new wounds system you could attack someone with an axe and cut off their nose, the skin on their forehead, an ear, as well as knock out exactly 13 of their teeth. It's much more detailed than the current version.
As to the caravans, having your own caravans is a planned part of the caravan arc.

The problem here is that the words in the RNG(Random Number/Name Generator) don't have genders attached to them. You could just pretend that uz crossdresses to look like a female.

As for the first question, creatures that have to breathe start drowning one level or more underwater. I guess holding your breath isn't programmed into the game yet.

I believe metal blocks do only take 1 iron bar to make, and since we have magma, you could easily train up dwarves that could make awesome masterwork statues by making a ton of iron blocks. But I don't think metal blocks are worth more than metal bars so...

Also, as to the marksdwarves, I also support building stuff to keep them up there forever such as personal dining rooms, bedrooms, food and drink stockpiles, and personal statue gardens. Also, apparently multiple layers of fortifications offer much greater levels of protection from elite goblin shooting.

I scoured the legends of a new world I made to find these ones.

Gogol- Skeletal male human. Associated with death, rebirth, and creation.
Also there was another skeletal deity to go along with him.
Vutu- Skeletal female human. Associated with blight, disease, deformity, scholarship and wisdom. Is it just me, or do those last two not quite fit?

Also a couple of scary deities:
Justras the whisper of abysses- Male human. Associated with darkness, pregnancy, and marriage.
Zikath the flowery vice- Female dwarf. She was associated with lust and depravity. She was one of the deities of the bronze whip.

+I always zoom to the dwarf when it says "Urist mcskilled is more experienced". I have to see how my dwarves are progressing.

+My dwarves get a great diet, with plants, meats, syrups and flours cooked together by skilled cooks. No alcohol cooking either.

+No pure hauler dwarves. Every dwarf gets a skill of some sort, once they become legendary at that they get another.

Oh yes it does. Apparently the rank of nobles is represented by how high they are on the nobles screen. My count and countess consort complain because my Dungeon Master has a bedroom with an artifact bed, but it doesn't affect their moods very much.
