You can probably use Dwarf Therapist in cheat mode to enable labors on a noble. The rest is simple self-restraint.

Ummm.. Montague? No. The player is not Armok. Armok is part of the lore of StA:GoB 1. The player is just a given fortress' overseer.In that case the overseer is incorporeal, which may as well make them a god.
It all depends on how busy the guy tasked with butchering is. I'm thinking it might have been assigned to someone before you added a bunch more "butchers" to your fort, so the game waited until he was available before the duck was slaughtered.That's not how it works.

Wouldn't biting and scratching, both edge attacks from an unarmed dwarf, be a problem ?Not for a while.
