How do DF releases work? Will all these little bugs be getting fixed in the next version or is it the type of game that's always got tons of quirky bugs? :p

The current release is 31_25 .. which I believe means that the game is 31% done.

 At such a stage there are endless amounts of bugs. Not only because the game is only partially done; but also because it's playable at this stage. I am no programmer but the fact that we can play it at all must be quite an achievement.

If you take a naked dwarf and draft him; order him to wear regular clothes... then un-draft him once he has put them on.

Think that'd work? On one hand the clothes are his military uniform but on the other hand they're just -clothes- and they're on his body.

brb gonna try that.

edit: nope. getting a dwarf to undress is easy, just tell him to replace his clothing with armor... but then I couldnt tell him to put on his old clothes (cant appoint owned items in the military menu. another reason not to make adamantine robes: people claim them as regular clothes and your military wont get to it!)
 i bought some new clothes and ordered him to equip the specifics. he did so (two socks and a toga) and there was some hope because when i relieved him from duty he took off the toga but kept the socks on... but unfortunately it seems the socks were simply a low priority job and they later came off as well... oh well.

imprison both of the people involved. Do not feed and do not water them. The one who shows signs of dehydration is the dwarf.

 ... if both of them show signs of dehydration I don't know what to do though. :( burn everything?

A serious answer though. He is a legendary engraver, yes? That means he is suspectible to the "had an artwork ruined" bad thought. If you've done something like tearing down a wall of his work to build a new room, then the messages "a urist McCottonmouth has been lost!" could have diverted your attention from the notification that he was struck by melancholy.

 Melancholy doesn't pause the game. Only "has gone berserk!" does that... so he could have been wandering around there for a while and just killed himself.

The way I do it is this: first I build an object. Let's say I built a bridge.
 Next I build a lever next to the bridge. I built it close because it's quicker and valuable dwarf-power is wasted if I build it in a remote area for the sake of safety.
 Then I build on the fortress. Nobles start coming in and they get nice quarters deep within the complex... and sieges occur.

 Before the sieges appear I make a control room near the nobles' rooms. The nobles don't have anything better to do than to pull levers so if ambushers appear on the bridge and scare people away from the bridge-lever I simply lock the door so the nobles cannot exit their block (and some idler on the other side of the fortress can't claim the job) and order the lever to be pulled. Someone is always on hand to pull it right away.

 ... in a big fortress I link all kinds of things to the control room though so accidents can happen. It is adviseable to keep the old lever next to the bridge because then you can monitor and cancel the pull in the last time-unit because some Urist has decided to sleep in the crushing-area.
 That is just one of the accidents fun things you can get from a central control room.
