Boars, bears, ponies, donkey's and possibly giant eagles would all be sensible choices for dwarves to ride, it would just depend on the terrain.
Actually dwarves should TRY to ride anything that is bigger than them. Imagine riding and elf into war.

If you could fill the swamp in with gravel or loam, then it would be possible to build on.

I dont think that all hermits should try to kill you. Some might join your fortress or give you quests in adventure mode. But some hermits might just burn down your fortress or assassinate your adventurer.

Also, dwarfs might go ice-fishing in winter, or in cold climates. They'd punch a hole in the ice with a sharp object (pick's fine) and then fish through that. That would be a great way to provide a little more protein and fat in your Fortress's winter diet.

This would be great if scurvy was implemented.

Failure to kill your dwarf will either let the Hammerer do it, or someone of some sort gets unhappy thoughts?
I think the hammerer should do it. The only people that should get unhappy thoughts should be the relatives.

Cows, dogs, cats etc. should have different breeds with their own respective attributes.
E.g. a rottweiler would be better war dog than a fox terrier but the fox terrier would be a better guard dog than the rottweiler. An alaskan malamute would give more meat than a fox terrier.
A freisan cow would give more milk than a jersey but the jersey would give more meat.

Maybe change "Abandon Fortress" to "Retire Fortress"?
But only if the fortress can cope on its own, if its undersiege, has no food or is flooded then it would be "Abandon Fortress". But if it can survive then you get "Retire Fortress"
