The point is that they aren't pathing through water at all. They should path through the room by taking a diagonal path over the doors, which have dry land beneath them. Their projected path is this:

That's all dry by virtue of the doors, and so, pathable land to the dwarfs. So they have a valid, dry path. However, when they actually open the door, the water greets them face on.

Doors. The idea here is that a dwarf has a valid path through this room, by stepping diagonally along the doors. But when he actually opens that door, the water floods him back.

I'm not sure what the point is either. But it's amusing. There may be some way to weaponize this, like with magma...

...so if there's a door, and a room filled with 6/7 water (or so) past the door, whenever someone tries to enter the room, they'll get washed away and the door will close behind them?

They wouldn't enter the room in the first place. No path, see? On the other hand...

Just might.

Dwarf paths through the diagonals, opens the door, gets sloshed back by the water. Some means of topping up the water would be good.

The dwarfs simply made it dwarfier, in this case by seriously oversizing it.

The only problem would then be building destroyers. Which can be averted if the drop zone is isolated with a retracting bridge over a moat, synced to the dropper for style points.

The problem is that the water changes too fast, so the pressure plate doesn't respond. They have an off hysteresis of 100 steps or the attached's off hysteresis, whichever is longer; and an on hysteresis of 0 steps or the attached's on hysteresis, whichever is longer.

So your best solution is, yes, a lever on repeat or one of the tried and true repeaters; look at the wiki under 'Repeater'.

Reminds me of the anti building destroyer mines. Hatch over pressurized magma. Building destroyer wanders by, pops the hatch and gets toasted. Fun.

It's simply a rather specific case of the general rules, of which Kanddak's writeup is the most detailed version of. And frankly, the pressure page on the wiki needs an overhaul, but I can't bring myself to do it...

Actually... Fireballs are guaranteed hits. I believe it was in one of the devlogs, that the almighty Toady One needs to remember to add some way of blocking fireballs in the next version, which are currently guaranteed to block, unless the fireball misses completely. But if you're on the same tile as a fireball, fwoosh. Anything flamable goes up.

I think I'd best elaborate.

Water paths preferentially in this order: Down, horizontally and lastly vertically. As such, a river, which has high drainage at one end, will fill a U-bend to just below its own water level, because the water would rather path to the nearly infinite drain (horizontally) than to its own level. However, block the river, or add more water than the drainage can handle and that last z-level will be filled. Read Kanddak's explanation of fluid dynamics, as Kenbo suggested.
