Easy you start by sealing off the 2nd floor from the ground floor. Then you biuld a support in the middle of the ground floor. And then you remove the walls :D
Any Biulding destoryer that takes that out will get a REALLY nasty headache as well as the guys around it should get a bath of magma :D

Wait a while and whatever animal is there will leave and something else will show up.  Or you can kill the animals and something else will show up.  So, yea, different things spawn.

Create world with advanced parameters and you can set the embark points.  There is a cap in the in-game interface, but if you save off your worldgen params, then go edit the file, you can give yourself as many points as you want.

Yes, if you make a raising bridge that is composed of only one square tile, it will work, however it will look the same open and retracted. 

For that very reason, I do not make 1 tile bridges, I use a floodgate or hatch instead, since they pretty much do the same thing.
i tried having my two back doors to my courtyard be floodgates, however the way it works, floodgates don't work when a bridge works so my main bridge would be open and the Flood gates closed and visa versa.

Using bridges is fine in your situation, just be sure you set them to raise and you will be fine.  Nice thing about raising bridges is that building destroyers will completely ignore them, not sure if the same can be said for floodgates...

Dwarves also will occasionally get happy thoughts from roads, while not from floors, so I like to stick a gold road or two in busy walkways.

Dwarves will flock to your city because they hear that the streets are paved with gold. They'll have to climb over a pile of rotting corpses and they won't actually be able to see the road through the clouds of miasma and the thick layers of dog vomit and dwarf pus, but they'll be comforted to know the legends are true.

Legends are always true.

Put up with failure to fulfill production mandates?  Could lead to serious jail time, unless you don't build a jail, in which case it'll only lead to an unhappy baron (and to no means to arrest your tantrummers)

If it's not on the trade agreement screen, the civ won't bring it.  There's still a chance that humans might bring some.
no jail= beating by captain of the guard

no captain of the guard = slightly unhappy baron, but really no other consequence...

The justice system is really horrible, many players simply do not appoint a captain of the guard, so the justice system never goes into effect.  If you need to deal with crazy dwarves, simply have your military dispatch them, of if they are really important then let them have their fit, they will eventually calm down.

Roads are a good way to keep trees/plants from growing where you do not want them to grow as well.

Would putting some high quality statues in the barracks be a good idea? I want to try to keep my military dwarves happy to counteract their "long patrol duty" bad thoughts.

After a couple battles, your military dwarves should stop caring about anything, yeah they will get bad thoughts, but they wont care about them so will never tantrum.  All it takes is witnessing a little bit of slaughter...

I'm pretty sure I read in the wiki that walls made from blocks can be engraved (not smoothed).
Maybe I (or the wiki) am wrong, never tried it.

You are wrong, go re-read the wiki.  Could have maybe even went and done that first and not posted that message which is quite likely to cause confusion to new people searching for answers.

Thanks for the answers, my river freezes for 2 seasons a year so I'll try windmills or the reactor.

Too bad there are no more underground rivers :(

If there's sourced water in your caverns, you can MAKE an underground river.  Dig a suitable path to the screen edge.  If no screen edge exists at the right z-level, make an exit for the water by smoothing fortifications at the map edge.

Careful of screwing up your framerate though.  Probably want to design it so you can turn it off.

On top of the framerate issues associated with this method, getting the water to actually have flow can be quite hit or miss.  I have found that usually if the water reaches 7/7, it wont turn wheels, occasionally I get some real flow, but for the most part you are much better off just building dwarven reactors to suit your needs.
