So I realized I have well over 600 copper bars with many more breastplates, shields, and helms waiting to be melted down.  I get some tin off the caravans, but a lot less now that I've got a king, so I have no idea what to do with all this excess copper--any suggestions?

One possibility is that you accidentally turned off mineral hauling in the {o}rders screen.  Another is that there hidden stone (visible and revealable via {d}->{b}-{H}) taking up the room in your stockpiles, although this shouldn't be the issue in the stockpiles that were working before.  Finally, make sure you have idling dwarves with the stone hauling labor turned on.

I think that what looks like an opening to you in the first screen is actually just a natural wall intersecting with a constructed wall.  Otherwise, yeah, you climbed the hill. 

Sometimes it can be hard to find the entrance to these castles.  One thing that can help is to watch the squares on the right--those are views of what is immediately below and above the view on the main screen. The entrance is probably slightly below or above a place you've already walked past.

And, point of vocabulary--in Dwarf Fortress, when we say "up" or "down" we're almost always talking about Z-levels.  Otherwise, use "north" and "south"; i.e., the difference between your two screenshots is that you took one step south, which in this case also happened to take you up one z-level.

Have you had thieves or ambushes?  If so the seiges will come, eventually.  If not, it's possible they died out in your world or you settled in an inaccessible place; you can tell if this is the case when embarking by {tab}bing through the various screens on the right.

Go into the equipment screen, select the squads that offend you, and hit {m}.  Doing so should make the text in the upper right say "Exact matches" instead of "Partial matches," which does wonders for obedience.

Pretty sure the main factor here is the size of the region (or maybe biome) your fortress is placed in.  That was certainly my experience in the last fort where I was killing lots of wildlife, which was placed in the middle of a gigantic haunted desert and subsequently had an unending supply of zombie camels throughout the nearly thirty year period I played it (Temple of Death, in sig).

Last time I tried, hunting still required too much micromanagement (they kill secondary targets but don't haul them back, they don't return to their nice comfy bad, they tend to haul things to workshops instead of stockpiles causing a lot of clutter).

Using the military is hardly more work and gives a lot more control. For volume, I prefer to eat the dogs that don't have the traits I want to breed for.
Agreed, back when you could have melee hunters I used those all the time, but now that you can't I just send my military out to moonlight whenever I need some meet or skins.

Yea, what Qloos said.  You can download a program here that allows you to create a snapshot of a fortress that's a fraction of the size of both savefile and screenshots.  You can then upload the whole thing onto the website, where anyone can see it.  If it's awesome enough, it can end up on the hall of fame.

Realistically, an underground settlement should be much less self-sufficient than a real-life human castle, yet it is currently much more so.
With the caveat that access to the magic vibrant underground ecosystem should be almost as good as access to the surface.

I've never really done material or reaction modding but I've always wondered if a person could remove the meat tags from all the current meats, create reactions to combine preservatives with food to create some sort of item that you'd added the meat tag to, and give the player race the carnivore tag.

I'm no programer, but it seems like there's a lot of low hanging fruit like this out there that could make a huge difference.  Things like mass-selection on the trade screen and defaulting new trade request screens to last year's agreement.  It couldn't take much time to add copy and pasting in the military equipment menu and the ability to select and copy multiple items/orders both there and in the schedule screen, and both would be huge improvements... and now that we have z-level designations, I'd love to see dwarves refuse to mine any designated ramp that has a designated ramp immediately above it, so one can easily designate multiple level open spaces without worrying about cave-ins. 

A y/n confirmation before deleting burrows would probably save lives.

edit: because that's all it is, if there's any question; they're homophones.

Not really... For dwarf, do you not pronounce the w?
as I babble to myself in various corny accents i think it might be that the vowel sounds are closer in american english (or, at least, my particular midwestern version of it) than in, say, british english.  i say the w, but it kind of gets overpowered, especially when saying it fast or casually.
