DF Gameplay Questions / confused again

how do you build channels with floodgates again? i built a channel next to the cave river that led to the room that i was planning on flooding and i thought i was supposed to be able to control the floodgate.  but for some reason when i access the floodgate with q, it doesnt show any open/close option so im confused.  and one other thing, is the channel supposed to fill up once its built? cuz when i first built it, it didnt fill immediately, but had to wait till the cave river overflowed, then it filled. so what im worried about is that when i do find out how to open the floodgate, the water wont flow out. so if anyone could tell me how to build channels it would really help

i cant figure out how to get beds so my dwarves dont start sleeping where they drop.  every time i selected on bed in the build menu, it said i needed a free bed.  so i tried making a workshop to make a bed but my mason wont work on it.  what do i do?

hey im going on a trip and i decided to try this out on the laptop my brother's bringing before i actually go and I found out that I can't scroll through the labor list and change what I want each of my dwarves doing and I'm freaking out so does anybody have any previous experience and know the solution? thnx

ok im a little confused about the diagram on the wiki page
diagram 2 showing the stacked screw pumps looks like it has a missing floor tile under each of the front(the part with the arrowhead) parts and im assuming that is to transfer power to the pump underneath and so if thats right then that means that every floor with a screw pump needs alternating floor tile/no floor tile for the pumps right?  
ok then my second question is where should the center piece under the windmill go? over the front or over the back part of the screw pump?

ok so my prepared food is cooked and stored into my stockpile but it's not being put into barrels even though i have like 20 extra barrels in my furniture stockpile did i do something wrong or is this just a bug?
btw im using the new version

hey so i was wondering, what if you were to make a canyon that leads to the entrance of our fortress?  and then carve fortifications on the upper floors of the sides of the canyons so your dwarves could shoot arrows at incoming invaders?  would that work? if the enemy archers are on the ground and your dwarves are one or two floors up then theoretically they could still shoot at them right? and the enemy archers wouldn't be able to shoot back because they have to be adjacent to the fortification in order to shoot through so that would most likely equal victory! yes?
