DF Gameplay Questions / Building farms in new version

I was a tentative player on the old version and had gotten the basics down.

Today I decided to try the new version and the first thing I have happening is that my little dwarfs are starving.  I can't build a farm plot to save my life.  In reading it appears that farming has been changed to need water/irrigation to turn soil into mud.  Now soil was acceptable in the earlier version and I'm not sure how to find mud or get the oceans or 7/7 water holes into my little 6x6 room to make mud for a farm.

DF Gameplay Questions / Magma Pipe

Hey all... finally found a magma pipe after piddling around with this game for a couple of months (yes, they are hard to find..lol).

Anyway, I've hit an obsidian wall on two levels (call them levels 4 and 5 going down from the surface).  Level 5...when I select the MINE option, has one grid on the wall flash red which I am assuming tells me magma is behind that wall.  When I go up one level to level 4, the same grid on the obsidian wall does NOT flash red. 

So, two questions here...

1. Level 5 flashing and level 4 not flashing, does that tell me the magma tops out on level 5?
2. Now that I've found magma...I'm really not sure what to do.  I read the wiki but still confused and I don't want to botch this up after hunting through dozens of created fortresses to find a magma source for smelters and forges.

Any tips, suggestions?  Thanks in advance.

DF Gameplay Questions / Dealing with beasties

Pretty new to this game.  I have the basics down to get started; digging, carpentry, masonry and stuff.  When I get to my third influx of migrants this appears to be where I lose control of my fortress and really can't seem to progress.

Issues are:
1. Goblin thieves: I have a couple of single soldiers armed and set to chase but these goblins seem to get past them, into the fortress, back out and then run away.  Sometimes I catch them but real low percentage.
2. I guess #1 leads to #2, developing my military.
3. Biggest problem when group three of migrants appear...I run out of things to do.  I usually have two carpentry, masonry and craftsdwarf shops running as well as a still and the farms.  But I can't really get my forge up and running.  I burn wood for charcoal, smelt ores but kind of get lost on where to go from here.
