Looking at the cook... He's an expert ambusher. Because of that, I got a mental image of a dwarf with a knife between his teeth hiding in a bush wearing a chefs hat...

My doctor doesn't get tons of work, except when the odd siege comes around, and he has assistants for then anyhow. He spends his free time as the local butcher.

what's actually wrong with it? high master cook is just awesome, woodcutter brings his own axe which is very usefull in early game, doctor is good and the fourth, well yeah he's useless unless you work wax.
It's not clear what does military tactics do, but it's safe to assume its effect is negligible
