Cutting down trees (especially over a limit that you've agreed on) pisses off elves.

This is good.

Elves that are in a good mood only bring along cloth and other such things to trade because they think that these things are most valuable. Sometimes they bring animals but usually normal ones (Dogs, cats, cows, goats).

Elves that are getting more annoyed tend to bring the real cool stuff, Giant Eagles, Bears, Cougars, and other Giant or otherwise cool animals.

Elves that are really pissed off go to war with you, and since they only use wooden weapons, they will loose horribly, as long as you have a nice set of traps ready, or a competent military and have them armed and armored, even in copper, they will own the elves. Sometimes almost never one gets a lucky shot with a bow and a dwarf will need some health care, but they'll be ok in the end.

You may not be aware, but it's normal for many members of the forum (including me) to just take everything the elves bring until they get mad enough to bring the cool stuff. Yeah you'll need to make a few copper weapons and sets of armor, but you don't even need to train your dorfs to fight, the first time the elves went to war with me I just had my woodcutter and 3 friends go and pickup the gear and they owned the elves, they had some bruises but they were fine.

Two last things:

1. Traps (like I said up there^) are pretty good for taking out elves, and cage traps are a good idea if you want to capture the elves, my current fort has 24 captured elves that I use to fight in my arena.

2. I apologize if you already know all this stuff, but I figured, I may as well share.

I have tried all of the situations you are suggesting, no matter the combination of weapons, the dwarves with shields and without axes win as long as they have armor. The dwarves with axes and shields keep using their axes and they bounce off.

The difference is when you remove their armor, then the axedorfs pwn.

So, as I said before, it seems that if you are going to arm your dwarves, shields are better than axes.

They did all die via skull fracture though... gimmie a sec to test vs unarmored.

EDIT:: You were on track, when unarmored the axedorfs win, but if you have armor, and they do too, give them shields!

I have been testing some weapons vs axes in arena mode, just to see which is the best in 31.12.
Teams of 5, at a distance of 5 squares, full armor set made of iron, a shield if the weapon they are using is one handed and the iron weapon they are using. They were also totally unskilled

So here's what happened:

Part 1:
What happened was I set up the first combat as axe dorfs vs wrestlers (with shields)
All the axe dorfs died, 1 by getting his right rib driven into his left lung, the other 4 by a skull fracture. (Even with the helmets!)

Only 2 wrestlers died, one by getting an axe lodged in his eye, the other by getting his throat slashed.

The other 3 are effectively untouched (one has a light brown left cheek and eyelid)

Part 2:
To make sure it wasn't a fluke, and also just to see what would happen, I put 5 axe dorfs as above, agains 5 dorfs with 2 shields this time. All untrained as before

The shield dorfs Pwned the axedorfs, who were all killed by skull fracture, and the shield dorfs were untouched.

Part 3 (YAY!):
This time I'm giving them training, Grand Master Fighter, Axes, Striker, Armor User, and Shield User for all of them.

Yeah, shield dorfs Pwned again, all the Axe dorfs died by skull fracture, and all the shield dorfs were uninjured.

So, I guess we should just arm all our dorfs with dual shields. Well, I'm going to go test this new setup vs some stuff you may encounter in fortress mode, and other weapons.
