When the dwarves are about to sleep [underground of coarse]you destroy the stairs so nothing from ground level will kill them.Is this a good idea or another stupid strategy?

I am trying to build beds for my dwarves but it says "needs bed" i have got a Carpenters workshop,Furniture workshop and Craftmans workshop. [i think thats what it's called]
but it won't let me build anything.[except workshops]And yes i have enough suplies and yes i have dwarves capable of building a bed.
