You need to actually set up burrows or locations with 'w' or 'N' before you can give them any order besides Train, because they all require a target.

I've noticed that just about nothing will stop a couple dwarves who have started sparring.  If one leaves to eat or drink or sleep, the other patiently waits for them to get back.  If one loses an ear... hey, no sweat!  An arm?  Only a flesh wound!

They finally stopped sparring when the axe got lodged in the one-armed guy's cheek and he got dragged to the hospital.  The missing arm and ear apparently didn't bother the doctor at all, though, but a cut cheek?  Locked up there for MONTHS.

Multiple windmills and watermills will pool their power, yes.  So two windmills will generate 80 power with which to power your axles, gear assemblies, pumps, etc.

The old version caused noise within 4 tiles of workshops.  Mining is worse, though: 14 tiles.  You're probably just going to have to live with that one.

Barrels with more brew in them aren't a result of a better brewer, they're a result of better farmers.  Brewers will only take one stack of plants to brew, and turn it into 5 brew per plant.  With better farmers, you get bigger stacks of plants, so more brew into the barrels.

Prepared meals follow the same vein: your cook will grab two, three, or four stacks of food to cook.  Thus, you can get some insanely large meals.  A lavish meal composed entirely of syrup might have up to 80 units of prepared food.  The thing to keep in mind is that the prepared food won't be put into a barrel if there are more than 10 units of it, because that's the capacity of food in a barrel.

So, my suggestion: prepare large meals to save barrels, fertilize your fields, get better farmers, and dedicate Pig Tails to brewing, which seem to have higher yields than Plump Helmets.

The biggest obstacle to healing is unconciousness.  If a dwarf is so badly injured that they're unconcious, then they're as good as dead (and as bad as berserk).

I'm fairly sure that error was that falling onto the absolute lowest z-level causes no damage.  That was fixed in the most recent release.

I suggest jamming four of them onto a weapon trap.  It'll be about as effective as a trap with a single trap weapon.
