As an aeriel hunter, it's probable that we have much, much better vision than ground creatures. We can probably simply be far enough away that the blue/white tones of ice and bone blend in with the blue sky.
Plus, it's a zeppelin. There's a massive balloon above the passenger compartment. Big blind spot.
Replace "blue/white," "ice and bones," and "blue sky" with "gray," "fog," and "gray clouds," and both of those apply just as well for becoming a cloud.

Why don't we just go straight up to them? They can't hurt us. If they fire on us we could just leave, or destroy them and warn the town nearby that their airship was taken over by pirates and we avenged them, sadly having to destroy the ship as collateral damage. If they want compensation, we have gold. (Just don't tell them where from)
I'd like to get an idea of what they are and why they might be here before attacking them.
