As for the whole Wendigo debate I think it comes down to whether a culture finds that act taboo or not. 
I remember someone made a convincing theory that DF's Boogeymen were actually nightmares that managed to come alive. The rational was that they could only appear during the night and that they could only appear near settlements. The boogeyman is also a common image in a lot of children's nightmares.
Using this logic you could imagine that Wendigoes are the results of people breaking their cultural/religious taboos which is seen as a great act of evil which either creates or transform the person into a monster. This means you could see Dwarven or Human Wendigoes but since Elves have a very different view on cannibalism they wouldn't transform. Possibly you might get Elven Wendigo from an Elf that chooses to eat out of pleasure rather than not wanting to "waste meat". I think it would be very easy to flesh out and explain the "lore" behind the monsters if you don't dismiss it straight away because Elves eat people sometimes.
...Wow. I had not thought about that. That is an excellent answer. My previous made-up thing may be considered discarded.
Could elven quasiwendigoes be created by, say, an elf chopping down a tree?

Well, those aren't mutually exclusive. Adding real-world legendary creatures has the advantage of being able to look them up in Wikipedia, though. You don't need to check Legends Mode to figure out if the Red Bear is friendly, dangerous if provoked, murderous, etc.

As would I, but I don't find it likely. Toady tends not to add things other people made to the game.

Find way to break out then join humans.
[3] You manage to escape the lab, only to be confronted by a number of guards.

Lead ragtag bunch of misfits to assassinate Greater Demon Kings. Preferably through poisoned bread.
[5] You break out Tavik Toth, find a crabman, recruit an antiperson mutant, and get accompanied by a little kid. You get a variety of high-tech and/or magical gear which could really revolutionize the universe if used more widely. Great! Now you just need to distribute poisoned bread to all the Greater Demon Kings spread out over half a dozen planets...wait, do they even eat?

Build reputation and form a merchant family.
[1] Your great bone sword was discovered to summon demons. The Resistance has been destroyed, and  several hundred thousand Abyssal Ravens (demonic ravens who are always on fire) are summoned through a portal to Hell created. Oh, and now there's a Hell. It was inevitable.

Control death daemons.
[6] You wrest control of the Death Daemons away from the demons. However, now they want their Daemons back...

Urinate on important demon statuary.
[3] You urinate on a Filth Demon officer. It doesn't care.

Flee Huma by hijacking a spaceship.
[2] No spaceships in sight. [1] Thankfully, you manage to lead some zombies over a cliff.

Respawn as a human
[4] You are a human. YHWH notices. You decide to convince him to let you stay human. [5-1] You succeed.

GM TURN:
The demons [5] cement their control over most of the universe, except Heaven, Huma, and Mobius. They [3] begin to siege Huma.
YHWH notices ShadowDragon and destroys all zombies and Death Daemons. Vorthon rejoices. People who notice the threat he was to the demons don't.

GM Note:
You may want to join forces if you want to defeat Y the demons.

Ninjad:
Get older and Begin to specialize in Ice magic and social history.
[2] You're the same age, but begin classes in magic and such.

No, be honest, you'll rush to the nearest alarm and call security, screaming about a containment breach or something.
Well, two things.
1. They don't know our differences.
2. Not going with the pack indicates independence. Going with popular will could be interpreted as anything from loyalty to a lack of free will.
3. We broke out. We solved a problem using what we had. That proves our intelligence.
4. We weren't told that we were being kept in one place and have no IC way of figuring that out. The lock was curious, but we have no idea of what a "lock" is--doors are new concepts for us. We don't realize we're prisoners or captives or whatever. We have no reason to think that we're not supposed to leave.
