Noy sure about realism, but the Fortress Defense mod and others that add hostile civs always add more Fun. Another thing to try is Dorf Space, with its necromorphs and lack of underground crops. Or combine DS and FD...

DF Suggestions / Caverns, Magma, and Clowns in Worldgen

People should dig mines in worldgen. For dwarves, it can be like a basement addition to their mountain halls; for goblins and humans it would probably be out somewhere farther away from their settlements. Mines could pierce caverns, allowing the civs access to creatures and plants from that layer if they didn't already have them. Mines could pierce the second and third cavern layers, eventually finding the magma sea, and gaining access to species of those cavern layers and (maybe) any tameable magma creatures as well. Striking magma would promote the creation of a large metals industry there, as the heat of magma would eliminate the need to burn wood for fuel and lower costs. Once a mine such as this got big enough, it could start to house people, maybe on the surface or maybe in the caves or in rooms carved into the cavern walls or whatever; it would probably vary by race.
However, it wouldn't be all peaches and cream; monsters from the depths could come up and attack the mining settlement, killing people and cutting off supply to ores and cave plants. This would be an interesting quest: "Kill the trolls occupying the mine, so that we can have access to our goldsmithing forges and dwarven whiskey again!"

Also bear in mind that kobolds are carnivores. That makes things...harder.

He's getting better, at least, but he has lost his ability to grasp. Hopefully that'll clear up once her hands heal, but...if not, we may need to euthanise her. She won't be able to work, or wield a weapon, or even feed herelf. A sorry fate for a dwarf. And that's assuming she doesn't die of infection.

Migrants arrive.
First comes a glazer/organizer who likes light-bluish stuff, followed by his big, skinny pet kitten, Monom Machinebearded. Next a fat llama, then an equally fat but much shorter wax worker, planter, and spinner. The third smart migrant is a cheerful masonry student who seems to know more about masonry than most of the locals. She has a gigantic, fat, ivory-haired pet boar. The next migrant is a tough, high master weaponsmith (but we have one already...), followed by a novice armorer (hopefully we'll get metal soon, so we can arm and armor all of our recruits). Next comes a “gigantic” cavy pup, then a “talented” mason--wait, he IS talented! Also fat, and liking dwarven wine, but neither of those matter, we have a talented mason! Next comes an animals dissector/recruit, and a woodcutter/marksdwarf. That completes the migrant wave, bringing our population up to 41.

vs a human equally as armed an armoured, I'd bet the human would win more often, due to superior training. The only thing badgers and their kin have is rage, which as powerful as it is, is not invulnerable to a battle axe to the face.

The human doesn't have superior training. Where are you getting that?
Animalmen as they are now are around the nomad/tribal stage (at best), meaning they don't have the food production needed to have full-time warriors. Of course, your vision involves steel battleaxes (which kinda infringes on dwarves' territory, but whatever), which would imply a higher level of organization.

Humans have several advantages over the other races already in Dwarf Fortress. Hense why they often are the dominant race. Their ability to survive in a variety of environments as well as their relatively stable political structure (as opposed to goblins for example) is a rather large boon.

Dwarves and Elves can almost never be the dominant race due to their tendency to bunker down in a few small sections of the world.

Goblins also lack the strong political structure to make long lasting strides.

It is only in small worlds where distances and territory are extremely limited that Humans can even think about not being the dominant overlords of all they survay and even then it is because they lose to the Elves' overwhelming numbers (And they get together with Dwarves too well to war with them too often).

The Human's other advantage is their wide range of advantages over their focused cousins (the tech focused Dwarves, and the whatever the elves do). They got a great political structure, their trade is strong, their technology is good, they get along with most other races, their magic is good, and they by far have the largest resource race, as well as a powerful culture.

Their advantage is that no matter what they are up against they have something else to use. They have few weaknesses and many strengths.

Of COURSE this excludes that I HOPE humans later start to have differening cultures.
So, humans are good at everything but excel at nothing? Sounds roughly what I suggested, with the caveat that the other races suck at diplomacy for varying reasons. Elves are disliking of other races' cutting-down-of-trees and other "blasphemies," goblins think differently and kidnap other races' kids (not to mention that they are openly lead by demons), kobolds can't talk, and dwarves...well, are dwarves.
