Start with the basics (food, drink, shelter, protection). Simplify. Don't panic! :)

Food is arguably the easiest industry in DF. A simple 5x5 plot of plump helmets will supply your fort with plenty of food and drink for the first couple of years. With irrigation currently disabled, just slap a farm plot in the first soil layer.

forgotten beast meat is a fantastic source of wealth.
What I do is save up the meat-stacks until I have 4, then I forbid all other cookable items and make a lavish meal. If each of the FB's dropped a stack of 100 meat (for example) the result is an ultra-valuable 400-stack roast!
Are lavish meals different from fines in anything but trading cost? I guess, the dwarves react better on these, but they seem to be reacting quite well to just fine meals, so if trading is not an option, is there really a reason to bother?

I do it for trading purposes, as well as the personal satisfaction of making a $1,000,000 roast. Sometimes I don't even sell it, I just wait and see how many years/decades it takes for my dwarfs to finish eating it. ;)

You are correct there is probably no benefit to the happiness of your dwarfs of making a forgotten meat roast, vs. forgotten meat stew or biscuits.

I have also noticed the quarry bush bug/quirk where roasts can contain more than 4 stacks.

I simply leave my dwarfs with the skills they arrive with. By the time there are 100+ dwarves then you're practically guaranteed to have all the skills covered.

The one exception is if a dwarf has a Strange Mood and becomse Legendary in an un-enabled skill; I will enable the skill in that situation.

100+ idle dwarfs? No problem!! :)

I consider having a high number of healthy, happy, well-fed idlers to be "winning" Dwarf Fortress. :)

I just leave them with the skills they had when they arrived---once the population gets up around 100, then all bases are covered.

The two exceptions are: 1) make sure the relevant skill is enabled when an unskilled dwarf goes to legendary through a strange mood; 2) sometimes I assign labors for children when they grow to be adults (or not; sometimes I just use them as haulers).

Only comment/suggestion: Unless you are dying lots of imported cloth, I would recommend tweaking the ratio of dimple cups to pig tails.

I put a Sculpture Garden in a mined-out soil layer (having first breached the caverns). My animals naturally congregate around the statues and eat the cave plants. No starvation, no animal fighting.
