They'll eat just about anything, including other chickens.

Usually whatever items you have in a battle is usually enough. Which makes the prospect of carrying around extra items and being punished for that an unappealing prospect.
A) Open chests without lockpicks or keys, and
B) Steal items from enemies.
So their inventories can actually fill up rather quickly.

What's your problem with eggs? It's not like chickens will magically stop laying them if people stopped eating them, and IIRC only unfertilized eggs are used in food.
I might be able to go vegetarian, with a lot of initial difficulty and probably only if needs demanded it. I could never EVER go vegan however.
