Point is, they were still a lot slower than Joruus, who might have been cloned to adulthood in under a year.

That wasn't quite it. The problem was clones being grown to adult age too rapidly, before their minds had time to adjust to the Force's everpresent quality. Joruus was a quick-grow clone, and his rapidly-changing mind snapped. Note that Boba (assuming he was actually a clone) and the other clone troopers were reasonably stable, but they took much longer to grow.The EU is a bit weird re: clones. In the Thrawn trilogy, the discovery that Thrawn had access to clone troops was enough to incite fairly considerable panic, and that took place a good amount of time before the Sun Crusher trilogy IIRC.
It gets a bit complicated. See, after the Clone troopers, cloning technology became somewhat... Rare. Extremely rare. And a major problem with cloning is that it leaves the clone highly vulnerable to going utterly insane. (Joruus C'Boath) The solution to this was to put Ysalamiri in with the cloning devices, to cut the clones off from the Force. Because apparently being cloned and not having a soul makes you crazy.But it's okay if you aren't in contact with the magical bacteria.
Really, it was the knowledge that Thrawn had large scale, non-insanity cloning technology that scared everyone shitless.

Thrawn, on the other hand...I'm not sure chess exists in the SW verse, or at least not in any way we'd recognize. I think we'd have to assume that Thrawn is at least allowed to read the rulebook ahead of time, maybe have a practice game or two.
