What about quality levels, which I think are there for alcohol, but hidden? Adding your masterwork ale to the well-made in the cistern might not work out...

I've noticed big stacks staying out of barrels, which makes sense as they don't need one and the barrel is free for booze. If you're afraid of vermin, embark with cats and lock every female after the first litter in a cage. When they start dying of old age, release a female, let it breed and lock up again. All the goodness of cats without a catsplosion...lowers your supply of "cat tallow roast (7)" though.

A wise man once said: "Dwarves are funny creatures, they balance out at "content" because on the one hand their wife was eaten by elephants and on the other hand they've eaten in a REALLY NICE dining room." If you have any precious metals, forge a statue or 2 and put them in there. If not, buy some from the caravan. Steel is high value as well, you may consider sacrificing a bit of armor/weapon for happiness. In addition decorate them with gems and stuff - should make a noticable impact, as every dwarf encounters the dining and therefore drinking room quite often.

Put him into a squad on his own, order him into your drowning chamber and open floodgate. however, i'd try to remove the shield and weapon first along with all labors, then let him pick up his sword. if he's still able to fight, only without a shield, he's still useful. lack of a shield lowers his survival chances, but outright euthanasia does lower his survival chances somewhat more!

Do you have watchanimals? You can place a restraint, which is a (cloth) rope or (metal) chain near your entrance and assign an animal to it to spot any infiltrators. Dogs are a popular and realistic choice.

And when you moved downwards, you can dig entire layers of soil out for a: miner expierience and b: a tree/moss farm. You'll need to breach a cavern first, however you can wall it off right afterwards. Trees are obvious, and you can use the moss instead of grass to feed herbivores.
