DF Dwarf Mode Discussion / Question about Refuse Stockpiles

Sorry to bother with this question, but I checked the Wiki and it wasn't forthcoming with the information I need.

What are vermin remains considered for the purpose of the refuse stockpile and dwarves hauling them?  I'm trying to set up a stockpile that collects nothing but vermin remains, and I can't quite seem to get it to work.  I've tried several different combinations that seem like they would work but my dwarves still refuse to pick up refuse.

I'm sure this has been addressed somewhere else, but I can't seem to find it.

Anyway, this is my problem:

I'm at the embark screen, and I'm trying to buy equipment for my single military dwarf.  How many "gauntlets" do I need to buy?  Do they come in pairs?  Or do I need to buy 2 "gauntlets" per dwarf?

Also, on the Military Screen, under equipment/uniforms, do I need to list "gauntlet" twice for a dwarf to make him equip both a left and right gauntlet, or will listing it once cause him to equip a pair?
