Well, if they're using bullets, that's a LOT of gravity over not much time, which needs to be turned off if someone wants to walk through it or something, so it can't be set up as a static wall.. And if they're using magic, well...that probably doesn't follow gravity.
She could use it as orbs of gravity wells floating around her taking bullets for her. I mean, unless Rag confirms this, I'm assuming we're mostly staying on the fantastic end of reality.

On that note: how exactly did Medea freeze Darnos and Fluffy in place that one time? Gravity doesn't do that.
Increased gravity to the point they were unable to move their legs. Without immense strain.
They would've broken their legs and probably Fluffy's spine.
Intensity control. Also, locality.
Although, Hecate might be more realistically able to do that than Medea.
