Crafts, coins, etc. Dwarves can't claim that stuff if the economy isn't active. Which it probably shouldn't be, since it's heavily bugged.

Cabinets store clothes. Chests store everything else. Neither are strictly necessary.
Some people don't recommend chests because dwarves tend to stuff food in them and it will eventually rot.

Well if you catch a vermin, that's a critter that won't eat through a barrel or something.
Some vermin can be tamed but dwarves will rarely adopt them. Or you can sell them off but it's not worth much of anything.

Also another way to train metalsmiths is to build metal supports.
It uses architecture, so you can train an architect this way too. Then you can deconstruct the supports and do it again. It's manually intensive, though.

You can't designate an area for trappers to trap. Also, I'm not sure what logic trappers use when they go out to catch things. They might try to catch things starting closest to the kennels, or closest to wherever your spare traps are, I don't know.
It's possible that you are catching fireflies and that your dwarves are eating them.

Two comments:
Remember that if you are going to be melting stuff down, do it all in the same furnace.
Also for weaponsmithing, an alternative to making trap components is making crossbow bolts. Then have your hunters or crossbowdwarves shoot them at things. A stack of 1 crossbow bolt melts down for as much as a stack of 25, so you can potentially get back more metal this way.
