This is an eager project and I, for one, support you in this endeavor.
Firstly, I would recommend a temperate to warm desert, as you don't want this river drying up and killing your dwarves should they ever run out of booze. Secondly, if you're in a desert, chances are that the first few layers will be soil, so you can set one up as a dedicated farm for plump helmets and other underground goodies, which will most surely keep your dorfs fed. Now, I feel like this hourglass will be quite a chore. Are you making sure to have a ton of above-ground z-levels? Obsidian is all well and good, but I would assume you'd only be using it for the frame, and that you'll use a megaton of glass for the...glass, because that is clearly more dwarfy. In this situation, I'd recommend 2 miners, a farmer, a mason or two, (you probably won't be needing a carpenter right away) and maybe a military dwarf, depending on savagery. the cool thing about the caverns is that once you breach, any underground soil starts growing cavern plants & grasses, so you can also dig out a subterranean pasture if you'd like. Pump stacks aren't very difficult persay, you just need to make sure that you don't make careless mistakes.
